Cold-Adapted Enzymes: Biochemistry and Biotechnology provides a cutting-edge investigation into the molecular mechanisms, structural dynamics, and regulatory pathways of enzymes adapted to cold environments.
Beyond classical microbiology, the book explores cold adaptation from psychrophilic bacteria and Antarctic fungi to microalgae, plants, and mammalian cell physiology. It provides biochemistry insights into carbohydrate (amylases, glucoamylases) and lipid metabolism, proteases, and redox enzymes, alongside the roles of molecular chaperones and prokaryotic proteomics. A key highlight is its focus on next-generation biotechnology, featuring AI-driven protein design, advanced computational modeling, and structural bioinformatics. Bridging foundational science with market reality, the volume explores applications from organic waste valorization to industrial biocatalysis, analyzing the global patent landscape and commercial players.
As the latest volume in the Foundations and Frontiers of Enzymology series, this book is an indispensable reference for researchers across biochemistry, biotechnology, structural biology, and microbiology.

Gomez-Casati, Diego
Dr. Diego Gomez-Casati is a senior academic and research scientist at the Centre for Photosynthetic and Biochemical Studies and Professor of Chemical Biology at the National University of Rosario, Argentina. He is PI of the Plant and Algae Molecular Biology and Biotechnology Laboratory and Vice-Director. Dr. Gomez Casati has a PhD in Biochemistry from the University of Buenos Aires. He was a visiting scientist at California State University, Fullerton, USA, Laboratoire Microbiologie Cellulaire et Moleculaire et Pathogenicite, Centre National de la Recherche Scientifique (CNRS), Université Bordeaux-2 and Pontificia Universidad Católica de Chile. He was also Professor of Plant Biotechnology at the National University of San Martín (UNSAM). Dr. Gomez-Casati’s research interests include the study of the structure, function and regulation of polysaccharide metabolism enzymes and their biotechnological applications. He has published over 85 research papers, reviews and book chapters, most related to the biochemical characterization of enzymes of energy metabolism.

Wayllace, Natael Maximiliano
Dr. Natael Maximiliano Wayllace is a Postdoctoral Researcher at the Center for Photosynthetic and Biochemical Studies (CEFOBI-CONICET), National University of Rosario, Argentina. He obtained his PhD in Biological Sciences in 2024, where he discovered and characterized novel microbial enzymes, with a particular focus on extremophilic systems, including cold-adapted and thermostable glucoamylases. His research combines biochemical and kinetic characterization with computational modeling to investigate enzyme adaptation mechanisms and structure–function relationships. Dr. Wayllace has authored several peer-reviewed publications on microbial enzymes, including studies on the structural and functional properties of cold-active glucoamylases. He has extensive university teaching experience and has supervised undergraduate students in biotechnology. His expertise in cold-adapted enzymes, enzymology, and protein engineering, is complemented by his academic contributions as reviewer and thesis examiner.
