Dr. Nirmal Mazumder is an Associate Professor in the Department of Biophysics at the Manipal School of Life Sciences, Manipal Academy of Higher Education, Manipal, India. He earned his Ph.D. in 2013 from National Yang Ming Chiao Tung University, Taipei, Taiwan. Following his doctoral studies, Dr. Mazumder completed postdoctoral research at the University of Virginia, USA, and the Italian Institute of Technology, Genoa, Italy, between 2013 and 2016. His research interests on encompass the development of advanced microscopy and spectroscopy techniques, biomedical device innovation, biophotonics, smart materials, food science and technology, and their biomedical applications. He has made significant contributions to these fields through an extensive publication record comprising more than 140 peer-reviewed international research articles, 21 books, over 50 book chapters, and serves as editor and reviewer for several international journals. He is a principal investigator on multiple government-funded research projects and an active member of numerous scientific societies.

Dr. Md. Hafizur Rahman is an assistant professor in the Department of Quality Control and Safety Management at Khulna Agricultural University, Bangladesh. He earned his Ph.D. in Food Chemistry and Nutrition Science from the Chinese Academy of Agricultural Sciences in 2020 and completed a postdoctoral fellowship at Jashore University of Science and Technology. His research focuses on starch modification and its use in gluten-free product development, including the effects of hydrocolloids, sugars, and salts on dough properties. He is co-editor of Advanced Research in Starch (Springer) and has published several articles in international peer-reviewed journals. Dr. Rahman is also experienced in nutritional analysis and food safety applications.
