The main problem associated with the use of entire males in pig production is boar taint, an unpleasant odour and flavour perceived when cooking or eating meat from male pigs that have not been castrated. Two malodorous compounds, androstenone and skatole, are believed to be responsible for the development of boar taint in entire male pigs. These proceedings cover most of the subjects involved: preliminary results from the EU research programme AIR 3 - PL94 - 2482, methods for the detection of boar taint, physiological background for synthesis and metabolism of androstenone and skatole, factors of variation and genetic aspects in androstenone or skatole levels in fat, prevention and sensory evaluation.
